Onion, tomato and corn are good, I like to top mine with a slice of swiss cheese. Maybe a little steak sauce for flavor in the filling mixture. Stuffed peppers are awesome!!!

I add fresh diced onion (you can just add a Tablespoon or two of dried minced) and a can of really well drained diced tomatoes, be sure to save the liquid to add to the sauce you pour over the top.

You can add some of the sauce your going to cook the peppers in, chopped onion, some chopped peppers, grated cheese.....
