Yo Amo = I Love

Me Encanta = I adore - may also be used as "I love" however it will not be taken as seriously as "Yo Amo". Usually "me encanta" is used to describe a smell, taste, or what you see whether a person, place or thing. It enchants me (literal meaning)

The difference between yo amo and me encanta is the next
Yo amo = I love which means that you are in love with some person.

Me encanta = I like it which means that you like something

She's right Yo amo Means I love. Then me encanta means I like. You usally say yo amo when you going to say it to a person!

even though all these answers are in some way correct, the truth is that each person uses those expressions in different ways. I think the difference between "yo amo" and "me encanta" resides in this:

If you say "yo amo la comida italiana", means that you like Italian food that much that you frequently eat it and maybe you know how to cook Italian recipes.

But, if you say "me encanta la comida italiana", it means that you like it very much and you enjoy when you go out to an Italian restaurant but you are not looking for it as an addiction.

the diference reside in the context you use them in,
it is true, yo amo = I love and "me encanta= I love "also

but "me encanta "shows" that you like or are atracted by something or someone in the highest degree.

maybe with some examples it'll be more clear.

yo amo( sentimentally involved with SO)

I love you. ( Te amo"would be more correct)
I adore you ( te adoro)
(like)

i love cookies ( me encantan las galletas)
I love shopping ( me encanta ir de compras)
I love to spend time with you ( me encanta estar contigo)
I love the way you are ( me encanta como eres)
