Even Peter forsook Jesus after the cock crowed three times as Jesus foretold: (Matthew 26:75) And Peter remembered the word of Jesus, which said unto him, Before the cock crow, thou shalt deny me thrice. And he went out, and wept bitterly. The most likely persons whom may have witnessed this moment in Jesus’ life were Mary Magdalene, Mary the mother of James and Joses, the mother of Zebedee’s children and other women (Matthew 27:55-56). However, there is no statement or account in the Gospels from those women as to what they saw or heard. (Alive)
The disciple(s) found the sepulchre where Jesus was laid down, empty, and made the conclusion that he was resurrected because the disciples and other witnesses saw him alive after the alleged Crucifixion. Nobody saw the moment he was resurrected. Jesus himself stated that he did not die on the cross in Luke 24:36-41, as explained in the following paragraphs.

Not quite right. While the others may or may not have deserted Jesus at the crucifixion, Mary and John were there. Jesus gave Mary to John to take care of while he was still alive on the cross. There were untold numbers of people there as witnesses, as well as the Roman soldiers themselves. Joseph of Arimathea claimed Jesus' body for burial. The Resurrection is a matter of faith. Nobody saw the moment of Resurrection, it was already accomplished by the time the women arrived at the tomb. They didn't know it was Jesus they were talking to, they thought it was the gardener. The Roman soldiers had been posted at the tomb, to make sure no one would steal Jesus' body and the penalty for desertion was severe. It's possible that they may have heard something connected to the Resurrection, because they ran away and the stone blocking the door had been shattered.

In your listing, you missed to mentioned that the apostle John witnessed the crucifixion, according to John 19:26. He had to have been present for Jesus to have commanded the care of his mother Mary to John. So at least one of the disciples did witness the crucifixion. It is unclear in scripture whether any of the others who fleed from the garden returned to the crucifixion. It as does not tell us how many may have been involved in the burial following the crucifixion.
This is one of the reasons why the New Testament takes the time to include the accounts of Pilate asking for confirmation of Jesus' death before giving his body to Joseph. Also the account of the soliders not breaking Jesus' legs like the did the others because he was already dead, and the account of the spear being thrusted into his side and splitting his heart into two pieces. So that there would be no question that he was actually dead.
As for the resurrection, you are correct that no one was present at the actual second of the resurrection itself. Even if they had been, they would not have witnessed it as it happened inside a sealed tomb. At the witnessing of the actual resurrection itself been the only "proof", then it would be slim proof.
Rather the Bible gives us over 20 appears of Jesus to people after his resurrection, over a 40 day period. This includes an appearance to a crowd which numbered in the hundreds - and not all of them were people who believed in Jesus. Appearances to the 12 on multiple occasions including in a locked room and on the shore of Galilee. Appearances personally to Peter and James. Appearance to Thomas and the others. Appearances to the disciples on the road to Emmaus (they saw him before anyone had reported to them that he was raised).
It speaks of their touching his wounds, of Jesus eating with them, of his spending several hours teaching them from the scriptures, and of his ascending before them into the clouds before returning to heaven.
Had Jesus NOT resurrected, then where was the body? The Pharisees and other had only to produce a body and the Christian faith would have been finished. Or they had only to deny his death on the cross. Yet they did neither. Rather, in their writings in the Talmud, the reaffirmed both the death of Jesus and the claim by his followers that he was resurrected.
As for the claim that Jesus denied his death in Luke 24:36-41, please keep reading. He specifically stated that he died and was resurrected in verse 46 of the chapter. You somehow forgot to mention that. Verses 36-41 are proof of the resurrection, as he was showing them that he still have a physical, living body after being crucified and having his heart cut into two pieces.
So you may want to re-read the New Testament a little closer. You appear to have missed a lot of the details in your first reading.

There is no record outside the bible.
And the bible accounts were not written by eye witnesses. They were also all written at least 2 generations or more after the event.
They would certainly not be admissible as evidence in any court anywhere in the free world.

never met him myself, so I have to take the word that he did live and roam the earth like the rest of us

First Peter denied him and you deny him and I deny jesus sometimes,
But you can't say that he didn't exist
second, all the deciples saw Jesus when he died, and they saw him after reserruction
It is left to you to decide wether you want to believe or not

according to Jewish law at the time of the writing of the "Gospels"... the written testimony of the scrolls we now call "Mathew' "Mark" and "John" would have been admissable as evidence in court.... and just 2 would have been considered positive proof with no contradictory evidence.
so essentially... you are just messed up.
