The BEST parties are those held at home! For my son's 8th, we had a Medieval theme - so games were created along those lines, I announced the guests as they arrived as Lady or Sir and blew a dollarstore trumpet - then they put up their paper 'shield' which my son and I made, along a string going across the living room. One of the games was Lady of the Lake, which they played after we told them the story of the legend. I got all info from books at the public library.
My son's birthday is in October, and it was cool, but they did banana jousting in the backyard, and that was a huge hit! (they wore garbage bag armor), and I made sure the bananas weren't too ripe or too green.
Those kids talked about that party til they were teens!

Not so sure your child is into this however,
Mine loved football and all sports:
We used our football field, had the boys wear a uniform and helmet's, had the girls dress as cheerleaders,
we had a real referee.
we made a banner for the boys to run threw..
As gifts I gave little footballs and the girls pom,poms.
We taped music and even had a half-time and played a game. During half-time they ate a little and opened some gifts.
We had the adults Father's and Mother's wear any football Jersey they had and a few played along with them
Kids that did not play were water boys and some kept score.
It worked out real well.
I have always tried to make my son's birthday's special.
One Year we had made an obstacle course:
easy and reasonable, but it took some preparation.
Sack races-bought at a feed mill.
buckets of water at the end of a raceway and had to carry and return with a team mate.
Ropes criss=crossed on top of the ground, and lie on your tummy to get through against another team member form the party.
Of course the limbo and they loved it.
So many other parties, and so much fun.

Can't go wrong with Chuck E Cheese!!
Bowling Ally, Roller Skating Arena and Movie Theaters usually have specials for birthday parties too. Could have a Harry Potter themed birthday if hes into it and have everyone go to the movie too maybe.
If you want it to be out doors maybe go to a State Park and rent a pavilion and grill out and go to the beach?

I don't know if your town has one, but my kids love Skateland/Playdaze (has skating & tubes, slides & like McDonalds, but is like 3 stories high w/ much more), Pizza Machine (it's expensive, but they have go carts, video games, rides), a water/aquatic center with little water slides (my 6yr old really loves those), some kind of fun center that has go carts & laser tag, etc (the one here even has water fight area, an arcade (what kid doesn't love video games!) How about at a swimming pool? Most pools can be rented for private parties. Hint: Serve the cake and ice cream after everyone has had a fun time in the water.
Make sure there is a lifeguard available.

Turning 8 is really big for a 7 yr. old. Why not have a picnic, then take him and his friends to the zoo. All kids love animals and I'm quite sure they will have a ball.

The Wacky Ware House is a great place but also Laser Quest is a good thing for his lads nd him self if they like army stuff nd guns nd runnin and chasing each other.

go to the place called malibu or somthing like that my sunday school group goes there and so does our youth group i havent been but my siblings said its really fun and very big it has like an arcade and go carts and everything a kid will love

go to a local gymnastics place or indoor playground kids love to run around and play, anything that's not super complicated will be fun for him. or maybe you could just ask your son what he wants to do.
