Lamb loin chops should be grilled over charcoal or pan fried to medium or medium rare. I recommend that you use lamb shanks or mutton in the crock pot and save those gorgeous chops for when you have time to cook them properly.

Closest 2 that I could find:
1 cup split green peas
3 lbs lamb shanks
2 1/2 cups beef broth
1 large onion, chopped
2 carrots, pared & sliced
2 stalks of celery, sliced
salt & black pepper to taste

Cover peas with 3 cups of salted water & bring to boil.
Boil 10 minutes, reduce heat, cover & simmer 1 1/2 hours,
or until peas are tender.
Brown lamb under broiler to remove fat, drain well.
Mix all other ingredients in Crock-Pot, stir well.
Add lamb pushing down into liquid.
Cover & cook on Low 10 to 12 hours.
Makes 4 to 6 servings.

8 lamb rib chops
2 tbsps vegetable oil
1/2 cup orange juice
2 tbsps honey
2 tbsps cornstarch
2 tsps salt
1 tsps orange zest

Brown lamb chops in oil in large skillet, drain well.
Combine orange juice, honey, cornstarch, salt & orange peel.
Brush browned chops with mixture & place in Crock-Pot.
Cover & cook on Low 6 to 8 hours.
For thicker sauce, remove chops when cooked.
Turn Crock-Pot on High, stir in 2 tbsps cornstarch 1/4 cup water.
Cook stirring until sauce is transparent.
Makes 4 servings.
