Well one reason why your rice is coming out to dry is because you probably not adding enough water. when you add water make sure that you can stir the rice in the water easily.
There is different Ideas for the rice... hmm Rice with red beans, yellow rice, and rice with chicken.
I would suggest going to the spanish section of the groccery store... maggi and goya are my favorite seasoning products.
get a can of red beans, goya powder seasoning (red cap) a can of tomatoe paste, if you want yellow rice you get... Sazon goya con azafran.
to prepare the red beans one you need onions, garlic, oregano, black pepper, goya seasoning (red cap), tomatoe paste, the rice ,and the can of beans and some oil.
Put oil in the pot fry the onions and garlic together and oregano and add the tomatoe paste and the goya seasoning to your liking... then add the beans ( I like to drain the water from the can that comes with the beans) its up to you... after you add the beans then add the rice... and add enough water... taste it to make sure its salty enough or to your likeing... let the rice cook... when you see that is getting dry... turn the heat down to around "3" almost near low and cover it let it cook slowly for 15-20 mins.
Yellow rice you can do different things to it add veggies chicken...with chicken breast make sure you open it up well so that it looks like a steak.
you cook the chicken seperately as you wish... I like to take the chicken add goya and black pepper, get a pan and put a bit of oil in it and let it cook slowly.then let it get a golden color. take it out and cut it into little pieces... now you make the rice.. again I like to take onions and garlic and fry it first (don't add more then 1tbsp of oil) then add goya and the sazon con afran add the rice... the chicken... then the water again taste it make sure its good. let it cook and eat
theres a lot of things you can do to it once you get the hang of it.... make chinese rice not just spanish types.. but lol I am spanish so thats all I can pretty much suggest even thought I do make chinese rice too but... those are some ideas!
I will add pictures of the goya and sazon :)
good luck and enjoy.

go to some pakistani/indian food store and buy a packet of shaan bombay biryani masala and follow the directions accordingly to cook.....if they are in english......
makes really really yummy chicken biryani with loads of flavour!!! a little on the spicy side..or ask some paki/idian person to help with the directions if theyre in urdu
also after u're done with boiling rice you could simply stir fry some shredded cabbage, grated carrots/green peppers in a little sesame oil in a wok on medium-high heat, when a bit soft add a beaten egg stirring quickly to break into tiny pieces ......add a little salt and soya suace if desired..... takes only abt 10-15 mins max......fold veggies-egg mix in the boiled rice to get really nice aromatic egg fried rice

You can use boullion cubes, which ever flavor you choose.
I would use 1 cube per cup of water. Also, add a couple tablespoons of butter or marjarine. It will be less dry. For added flavor you can also throw in a couple tablespoons of finely chopped chives.
