It would be simpler, but not better! Not all fats are bad and some you actually need as part of your everyday energy. The fat you want to stay away from is trans fat. This increases bad cholesterol and should be consumed rarely if at all (no more than 2-3 grams/ week in order to prevent your body from storing it!)
Saturated fat is needed, but in moderation. You only need about 25-35 g/day.
Monounsaturated and polyunsaturated fats are good fats and increase good cholesterol! You can get your daily dose in just 2 tbsp of olive oil/ canola oil/ sunflower oil in regular cooking/ some salad dressings.

well, your body needs fat to protect your vital organs..
good fat is those you get from fatty acids enriched oily fish, these are beneficial to you.
you gotta lookout for trans fat though, most products in US should have labels indicating the amount of trans fat in it, usually a small amount. This type of fat is really bad for your health, they're artery clogging and can be found in processed foods, and seemingly healthy low fat margarines, low fat mayo and things like that.
Saturated fat is also something people should try to avoid normally. They have extra chemical bonds and stuff.
Unsaturated fat is probably "the" normal fat. Too much is bad for you but you need a lil to keep your body working properly.

Unsaturated fats (Poly- or Mono-) are healthier. Saturated and Trans fats are bad for heart health. However, you need fat to digest vitamins and minerals, which is very important to good health.

THIS TYPE IS BAD FOR YOU.
UNSATUARATED FAT IS LIQUID AT ROOM TEMP, AND IS MUCH BETTER TO EAT.
CONFUSION REIGNS IN MONO AND POLY AND DI-UNSATURATED.
TO MAKE IT SIMPLE, IF IT'S MANMADE AND SOLID = BAD. IF IT'S LIQUID AND VEGETABLE OR MARINE (LIKE FISH OIL) IT'S GOOD.

Just eat what you crave as long as you eat your vegetables/fruits to balance it out. Stretch/exercise everday. A little can be a lot.
