Currently my tuna sandwhich consists of - Tuna (chilli flavour), Cheese, Baby Spinache, Mayo.

I must be weird. I put some mayo and diced pickles It tastes great.

To make it crunchier- try adding some celery or granny smith (green) apple
Try adding different spices to the tuna such as chili powder, Emeril's essence, garlic and onion powder, etc.
Try toasting the bread or using a different variety of bread than usual
put the sandwich under the broiler to toast the tuna
Try a real tuna steak...its a little expensive, but well worth the money.

My personal favorite is a tuna bagel (can of tuna, 2 tbsp mayo, 1 rib of chopped celery 1/2 tbsp emeril's essence, 1/2 tsp each of onion and garlic powder) combine and top on a bagel of any variety, then top with any variety of white cheese (or processed american) and broil until cheese is melted and begins to turn brown.

don't get me wrong I like baby spinach but it tends to have a bland taste,try using cilantro or parsley in your tuna sandwich and eggs and salt and pepper but leave out the chilli powder this time and add chilli flakes,that's if you are using the powder kind.and one more ingredient a splash of lemon juice.

i make my homemade tuna simple

to a can of solid white tuna packed in water
i mix together to my taste
mayo
olive oil
lemon juice
chopped celery and onions
salt-pepper-dash of sugar

i use butter on my bread of the day
add lettuce and tomatoes

In addition to what you have I'd add: 1 tsp mustard, 1 tb chopped capers or olives, 1 tb chopped sun dried tomato, 1 chopped green onion or 1 tsp chopped white onion, 1 tsp lime juice. A dash of salt. I let the lime juice cook the onion, then add the other ingredients. Mix. Add to toasted 15-grain whole wheat bread, or toasted pita bread. Enjoy.

Onion, tomato, red peppers, celery, green olives,ground carrots, tartar sauce, maybe a dab of horseradish. Change the breads now and again--I like rye but Italian is good.
Now I'm hungry! :)
