I made a casserole earlier that has sharp cheddar in it. I was in a hurry when I put it together, and really can't say that I payed a lot of attention. The cheese was dated November anyways! But we ate some of it and then my husband went to get seconds. He likes extra cheese so he got some out of the same pkg to put on top and discovered mold in it! Are we going to get sick? What happens when you eat moldy cheese.

but this is cheddar....not blue cheese

A small amount of mould on your cheese just indicates that you are getting what you paid for-a well matured cheddar cheese.
just scrape it off or discard the mouldy bit.
In my experience I use the rule of thumb that if it smells good its fine if it smells rancid and is covered in mould and cracked- discard it.
Store your cheese in a good airtight container in the Dairy Compartment of your fridge- don't keep it too long before using.
If you come across red or yellow mould-- they are the dangerous ones-- discard the cheese and wash the container out with hot water and detergent.

If you haven't become sick by now,you won't. In many cases, just slice the mold off of the cheese and the rest will be good. This is for large blocks and not packaged slices.

because of the fact its a sort of mould it somewhat is secure for us to digest. All cheese has a mould element. Thats the way it turns into cheese. Yogurt too. the topic with moldy bread is that its one among those mould that would reason ailment.

Have you ever had bleu cheese the blue part is mold - so is the rind on Camembert and brie - it may change the taste (make it sharper) but it won't hurt you.

No and I'm sure the part that you used didn't have mold, you would have noticed it.

you may have to go to the hospital as some molds can make you sick.
