I am starting to send out cover letters & resumes to perspective employers. I would like to include in my cover letter that I will be starting an accelerated bachelor degree. What is the best way to include this information? In the cover letter, resume or both?

If you intend to start the courses, and you have done something in this regard (meaning you are part of them, but just waiting for them to start), ten you should mention this both in your resume and in your cover letter.
If you only intend to go for an accelerated B degree, then not a good idea. It would be part of your education and if you don't actually start it...welll.....

Monster has a good site for putting together a resume and cover letter. You may also want to check the Microsoft downloads, I believe they have sample resumes and cover letters.

If it is not directly relevant to your job, then neither. Mention it at the interview if it is necessary due to scheduling reasons, but otherwise what you are GOING to do is not as important as what you have already done.

You shouldn't mention anything until you actually start. Once you do start put it on your resume under education, put the day you started, ie


Education

September 2007...............................DeVry University
until Present .................................... Currently persuing B.A.
