When I worked at a deli counter, I was surprised to find that the deli ham (square shaped) that's sliced to your order actually comes in a tin can. When you open the tin, the wrapped in the plastic wrap. This is what you see in the display counter.
I believe the ham is packaged and put into the tins and cooked. That's why the ham slices have the square shape.
The only ham I "trust" is what I bake at home and slice off the bone myself.

Tinned ham can be really nice if you prepare it correctly (look in older cookbooks for recipes) - It should be slow cooked for best result and if it is of a good quality no one will know it came from a tin. Deli ham is better for quick service like sandwiches, the butcher counter is best for a good ham steak or picnic shoulder though.
