I believe the word is Cajun French. May be similar to Bakshees, Kick-back etc.

The word is lagniappe.

Although the word tip is most common. :)

The word is lagniappe, but we don't use it. In fact very little people speak cajun French in New Oleans, We just say tipping and Gratuity. But mostly tipping.

As a native, I can tell you that tipping is the word for tipping; but if you give a little extra (beyond what's expected), that's lagniappe! Pronounced: lan-yap.

No, no, no. We DO NOT speak Cajun French in New Orleans; New Orleans is NOT Cajun, and never was. Tipping is tipping.
