3 red potatoes
2 eggs
1 1/2 cups creamy salad dressing
DIRECTIONS
Bring a small pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain and cool.
Place eggs in a saucepan, and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool.
Peel the eggs and cut around the egg white; keep the yolk whole.
Dice the egg whites and potatoes. Combine in a mixing bowl and add the salad dressing.
Toss the potatoes and egg; crumble the egg yolk on top and serve chilled.

I love potato salad! Here's my favorite:
2 lbs russet potatoes, peeled and cut into cubes
3 hard boiled eggs
1/2 cup diced celery
1/2 cup diced red or yellow onion
1 clove minced garlic
1/2 cup chopped dill pickles (or sweet, I prefer dill)
2 T pickle juice or red wine vinegar
1T yellow mustard
1 cup Real Foods Mayonaise
2 T ketchup
1 T Worcestershire sauce
Kosher salt and fresh ground pepper to taste
Boil potatoes until fork tender and drain well. Cool. Mix together mustard, mayonaise, ketchup and worcestershire sauce. Add garlic, onion and celery. Toss with potatoes and add pickles. Salt and pepper to taste. If mixture is too dry, add more mayonaise. Chill for several hours and enjoy!

boil baby new potatoes allow to get cold cut the potatoes into four ,chop some white or red onion,a few chives,some parsley place in a bowl add mayonnaise and mix carefully there needs to be enough mayo to coat but not smother the potatoes, chill in the fridge until required.

Boil new potatoes and leave to cool. Grill some bacon and chop up, in another bowl put mayonaise and a little milk to make it runnier add fresh mint and some peas then add the potatoes and stir in simple and yummy.

Why not make a German Potato Salad
The only fiddly bit is skinning the potatoes once cooked.
Try to use potatoes cooked the day before as it is easier to slice them.

Boil some baby new potatoes until they are tender then set them aside to cool. Once that is done, dress with lemon juice and olive oil then finish with cress, spring onions and chives (and even some avocado if you are feeling adventurous) plus salt and pepper to taste. The dressing is much fresher than mayo.

ingredients: 6 medium sized potatoes, one onion, three tomatoes, three cucumbers, oil, salt, pepper, and a Greek cheese named feta! if u don't find the last one it doesn't matter but I'm Greek and i have to say that if u add this the whole salad changes!! boil the potatoes for 30 minutes and cut them in medium slices, cut all the rest and then pure 3 spoons of oil and the salt and pepper. and if u have FETA! that's all dear!

This is a different one but simple and really good.
Cook potatoes with or without skins until fork tender.
Slice or cube and set aside.
Hard boil eggs ( I guess at 1 egg per 3 med. taters)
In large bowl mix:
Italian dressing
diced celery
diced green onions
small amount of mayo
pimento olives
Then add taters, mix then top with sliced eggs.
