Since I am a big guy, I will tell you how to beat one. Take it to the ground. You have taken his his power of height and weight away. Whatever you do, don't get put on the bottom. If he charges, guilotine choke, but make sure to wrap the legs around him.
The best advice I can give you is go under the arms and wrap up. slide behind him, and go for the rear naked choke (but if he falls on you, don't let go!!), and if it isn't open, while still holding your arms around his waist, slip your foot around his and lean foward while pulling his leg back.
Now that he is on the ground, you are on his back or he is on you. If you managed to get his back, secure your legs firmly. The choke here is your best bet, but if you can't get it, shots to the ears hurt like hell.
If he is on you while you have his back, you MUST get the choke. because if he spins on you, you are in trouble (if he does try pushing away from him with your legs then kick him in the face.
In closing I would like to say fighting sucks, I hate it when I break a knuckle, worst pain ever because you don't realize how much you use your hand. Also, hairgrabbing is perfectly fine, wear steel-toed boots, and a shirt that rips easily.
Good luck - and remember a straight jab to the nose will make his eyes well up enough for you to get the advantage!!

You partially answer it yourself. You say he is fat and his hands are fast and punches are strong and that you have some background in kicking and striking. A fast kick to the groin or knee and a finger jab in the eye will pretty much give you the fight and leave him somewhat blind for a short time and or slow him down and then you can just tee off on him.

Alot of "tough guys" say they wouldn't tap if placed in a hold. This is comes from alot of guys who have probably never been locked out/choked out.
If you can armbar him, chances are he will be to proud/stupid to tap till you actually wreck his arm. He will think he can grit through the pain, but as soon as you extend the arm and throw those hips up, its snap time. If you dont want to seriously hurt him, the safest route would be to choke him out. Who cares if he doesnt tap to a rear naked choke, or one of many others at your disposal if you really are a BJJ player. He's gonna pass out if he doesnt tap. When he is out, piss on him or something for being an idiot.

Tell you the truth my friend.If you said your stand is good.Then try to keep the fight standing.But if you are really good in bjj.I would say punch the guy with your hardest punch and then go for a shoot.If you do that this rugby guy has no chance with you.

Is this an MMA type match? If it is, then a sleeper hold or a choke would do the job. To paraphrase Rorion Gracie: "He can't breathe, he can't fight." Otherwise, if it's a real fight, then just pick up a rock, a baseball bat or a chair and let him have it, then run like hell. Or you can just dispense with the hitting part and just run like hell at the outset.

That "axe handle lock" is a Muay Thai Clinch.
Is this like a sanctioned fight or are you just doing it in a circle of people chanting "fight" over and over again.
If it's sanctioned and you take him down.. just choke him out. He'll either learn how to tap or keep losing consciousness.
If it's just a street fight don't even bother. Are you really gonna gain that much of a reputation to risk getting your *** beat?
If all else fails bring a can of paint with you ;)

lots of good answers here!!-i would personally draw him in keeping on the move-then when the time is right (he delivers a haymaker for instance) get under the attacking arm-get up close to him and strike the knee to the side. he is not forced to use a punch first off-this is why you have to keep moving-wait until he does what YOU want him to do then get in do the business and get out again-also keeping on the move will tire him out.
