Forget Karate, try enrolling him in an Iaido school, then he can become a blind swordsman, cool! : P

Seriously, you can try teaching him the simplest kata, so he can practice by himself and get used to the movements, then you can teach the more complicated forms and you can throw in some sensitivity drills and close quarter sparring later on when he has gained a little confidence and has mastered his movements and balance. Nothing is impossible as long as he is determined to do it. It may take time, but proper dedication and patience will make it possible sooner or later.

Look online and see what you can come up with. You can teach a blind kid how to do karate.
