FETTUCCINE ALFREDO
1 lb fettucine
1/2 cup butter
2 cloves garlic, chopped
2 1/2 cups light cream or half and half
1 1/2 cups grated Parmesan cheese
1/2 teaspoon pepper
pinch of salt
Bring 4 quarts of water to a boil. Add 1 teaspoon salt when water is boiling.
Add fettucine. Cook uncovered 10-12 minutes (or according to package directions). Drain; cover and set aside.
IN a large skillet, melt butter. Saute chopped garlic over medium heat for 1 minute.
Stir in 1 1/2 cups cream or half and half (half and half = half milk/half cream).
Cook over medium heat 3-4 minutes, stirring constantly. When hot, stir in fettucine. Add remaining cream or half and half, Parmesan cheese, and salt and pepper. Stir to mix well.
After 1-2 minutes, when pasta is hot, serve accompanied by extra cheese for sprinkling, if desired

Easy Alfredo Sauce II
INGREDIENTS
* 1/2 cup butter, room temperature
* 3/4 cup grated Parmesan cheese
* 1 cup heavy cream
DIRECTIONS
1. In a medium bowl, beat butter and Parmesan with an electric mixer until fluffy. Add cream, a little at a time, until mixture resembles softly scrambled eggs. Toss with hot pasta to serve.

Well since there are 2 basics I will provide both:
Easy Alfredo Sauce:
1 pint heavy whipping cream
1/2 cup butter
1 1/2 cups grated Parmesan cheese
DIRECTIONS
In a medium saucepan combine whipping cream, butter or margarine, and grated Parmesan cheese. Cook over medium low heat until smooth. Remove from heat. Sauce will thicken upon standing.
Easy Pesto Sauce
INGREDIENTS
1/4 cup pine nuts or toasted almonds
3 cloves garlic
1 1/2 cups fresh basil leaves
1/2 cup olive oil
1 pinch ground nutmeg
salt and pepper to taste
DIRECTIONS
In a food processor, combine pine nuts or toasted almonds, garlic, basil, olive oil, nutmeg, salt and pepper. Process until a coarse paste is formed.
Serve over hot pasta (or on warmed Boboli with fresh veggies)

Ingredients:

1/4 pound butter
Regiano cheese
cream or half & half
Directions:
While pasta cooks, take a big deep serving dish and warm it in the oven. Just before the pasta is done, take the plate from the oven, place 1/4 pound softened butter on the plate. Now dump on as much freshly grated Regiano as you want, pasta goes on top next right from the water then let it set for a moment. Add cream or half & half and toss with a big spoon and fork. Serve immediately. Then call the doctor the next day.
This recipe for Fettucini Alfredo Sauce serves/makes 4.
-----------Lowfat Fettuccine Alfredo Recipe
Ingredients:
1 pound fettuccine
1 teaspoon garlic powder -- optional
1/2 cup nonfat cottage cheese
1 teaspoon onion powder -- optional
1/2 cup evaporated skim milk
2 teaspoons parsley -- minced
1/2 teaspoon arrowroot or rice flour
grated parmesan cheese, to taste
salt & pepper to taste
Directions:
Cook fettuccine and drain. Meanwhile, combine cottage cheese, skim mild, arrowroot, salt and pepper, and garlic and onion powders if desired, in a blender. puree until smooth. Transfer mixture to a heavy skillet or saucepan, add parsley and warm over medium-low heat for 10 minutes. Do not let sauce boil. Remove from heat and pour over hot, drained noodles. Sprinkle with parmesan.
Variations: use tomato or spinach fettuccine, and garnish with sun-dried tomatoes and chopped fresh basil.
Or lightly steam 1 cup broccoli florets for 3 to 4 min, until tender-crisp. Toss with sauce and hot pasta.
Or saute 3/4 cup sliced mushrooms in 2 tbs red wine. Toss with sauce and hot pasta.

Fettuccini Alfredo with Prosciutto and Peas Recipe courtesy Emeril Lagasse,
2 tablespoons extra-virgin olive oil
2 shallots, minced
1 teaspoon minced garlic
1 cup heavy cream
Salt and freshly ground pepper
1/4 pound prosciutto, julienned
1 cup frozen peas, thawed
1/2 cup freshly grated Parmigiano-Reggiano, plus more for garnish
1 pound fresh fettuccini
Heat olive oil in a large skillet over medium heat. Add shallots and garlic and saute for a couple minutes or until tender. Add cream and cook for 1 to 2 minutes. Season with salt and pepper, to taste. Add prosciutto and peas and toss gently to combine. Sprinkle cheese over top and stir to melt and combine. Cook until heated through.
In a large pot of boiling salted water, add fettuccini and cook until al dente, just a couple minutes for fresh pasta. Drain, reserving 1/4 cup pasta water. Add the reserved pasta water and drained fettucini to skillet. Toss to combine pasta with sauce and season with salt and pepper, to taste. Serve, garnished with extra cheese.

I have no clue how to make it from scratch. I do know, however, that Kroger and Walmart sell the sauce in jars and it's really good.
