ok, so I know how to cook, my problem is that I dont know WHAT to cook. Whenever I go to the grocery store, I never have any ideas on what to make for dinners, so I just end up buying "ready made" dinners, hamburger helper, spaghetti, etc...(the easy stuff).

can you guys please give me dinner suggestions and/or recipes, so i know what i need to get when i go grocery shopping?

I do the same thing if I do not plan out some recipes and make a grocery list its really kind of fun.


CHICKEN FETTUCCINE

1 stick butter
2 lbs boneless, skinless chicken breast
1 cup half and half or cream
1/3 cup Parmesan cheese
1/4 cup green onions, chopped
2 cloves garlic, minced
1 T lemon juice

Melt butter in skillet and saute chicken which has been cut into 2 inch chunks. When chicken begins to take on color, add garlic and green onions.
Add remaining ingredients except lemon juice, cover and simmer over low heat until mixture thickens and chicken is tender.

Serve over cooked and drained fettuccine. Sprinkle with lemon juice and additional Parmesan cheese if desired.

Home made chicken pie:

1 Pillsbury pie crust( the kind in the dairy section that you must form into a pie pan)
Cooked chicken( as much as you want )
1 can mixed veggies( drained)
1 can corn( opt )( drained )
2 cans cream of chicken soup( do not add water!)

Cut up chicken and mix in bowl with veggies, add soup.
Put 1 pie dough in 9" pie pan
add chicken mix
cover with other pie dough.
Preheat oven to temp on pie dough box. Bake till dough is flakey.
Very easy recipe will feed a family of 4.

I know how you feel, I get stuck in a rut too. I pull out a cookbook and just leaf through it, not looking for anything in particular. Or if I know there's something that needs to be used up, I do a web search on it.

I like to make enchiladas, curried rice pilaf, linguini carbonara, mashed potatoes and bacon gravy, spinach-orzo salad, risotto, homemade stuffing, roast Cornish hens, Swedish meatballs, veal piccata, filet mignon in Cajun cream sauce, soups, roast a turkey, or goulash.

Hope any of these helped for ideas. I know what it's like to be in "Hamburger Helper" mode.

My husbands favorite meal that I make is modeled after Outback Steakhouse's "Alice Springs Chicken". It's marinated chicked breast, cooked and topped with honey mustard sauce. Then bacon is placed on top (and mushrooms if you prefer, we dont like them though) and cheese and then baked. It's served with a an extra side of honey mustard for dipping. It is delicious! I usually pair it with a side salad and baked potato.

Here's the best recipe:
4 servings 1½ hours 1 hour prep
Change to: servings US Metric
4 boneless skinless chicken breasts, 1/2 " thick
honey mustard
6 slices bacon, sliced in half
1/2 teaspoon McCormick's Season All
1 cup sliced mushrooms, drained
3 cups shredded colby or monterey jack cheese

Potluck Main Dish

Rub chicken breast with Seasonal All and set aside to marinate for 1 hour.
While the breast is marinating fry bacon crisp and drain.
Sauté chicken breasts on medium heat in pan with just enough oil to prevent sticking.
Cook on both sides until a slight golden color and cooked in the middle but not dry.
Remove from pan and place in a 9 x 13 dish.
Spread chicken breast with honey mustard, cover with a layer of mushrooms, three pieces of bacon and then sprinkle with shredded Colby/jack cheese, chicken should be covered with shredded cheese.
Bake at 350 degrees about 15 minutes or until cheese melts.
Sprinkle with parsley and extra honey mustard may be served on the side.

And the honey mustard:
1/2 cup Kraft mayonnaise (don't use Dukes or Miracle Whip!)
1/4 cup mustard
1/4 cup honey
1 tablespoon rice wine vinegar (leave out if using for dip)
1 dash salt
cayenne pepper

One of my favorite summer dishes is Angel hair with fresh tomato and basil with shrimp:

1 tablespoon olive oil in a large pan,
Salt and pepper about a pound to a pound and half peeled, deviened and washed shrimp, and add to pan about 3 minutes on each side and remove from pan to bowl.

Add 2 tablespoons of olive oil to pan, and a few cloves of fresh garlic crushed (to your taste)
Pour in 2 cans of organic diced tomatoes with their juices and about a half a can of water. Bring to a boil and let simmer for 5-10 minutes until it boils down to the consistency that you want.

Meanwhile, prepare and drain about a half a pound of the pasta of your choice. (Be sure to add olive oil to the water since this sauce is watery)

Add shrimp back into the tomato sauce and add a cup of fresh chopped basil. Stir, and toss with pasta. Serve with shredded parmesan cheese and garlic bread.

how about chicken and rice, sometimes you may want to marinate the chicken overnight in terriyaki, you can also make some carne asada tacos easily, just get some already marinated flap meat from a Carniceria, bar b que bratwurst, with the johnsonville, the large ones like italian sausage size, and put them on the fresh french bread rolls they have at the grocery stores, the made fresh daily kind, i use mustard on them, well thats three of my easy things to make, i specialize in easy, mostly using the bar b que, you can bar b que everything. if your good.

*********OVEN-BAKED STROGANOFF
2 1/2 lbs. steak, cut in thin strips (good with venison steak)
1 lg. onion, thinly sliced
1 clove garlic, mashed
3 tbsp. flour
1/4 tsp. pepper
1/4 c. tomato paste
1/2 c. sour cream
5 tbsp. salad oil
2 c. fresh mushrooms, sliced
1 tsp. salt
1/4 c. dry red wine
1 bay leaf, crumbled
1/2 c. beef broth or consomme
In frying pan, brown strips of beef or venison in oil; transfer meat to 3 quart baking dish. Add remaining oil to drippings. Saute onion, garlic and mushrooms until limp. Remove pan from heat and add flour, salt, pepper, wine, tomato paste and bay leaf. Blend in beef broth. Stir until ingredients are blended. Pour over meat. Cover and bake in 350 degree oven for 1 hour or until meat is tender. Remove casserole from oven. Gently stir in sour cream and serve over cooked wide noodles.

*********SWEET AND SPICY CHICKEN
6-8 chicken breast
1/2 cup orange marmalade
1-2 Teaspoons chili powder
Preheat oven to 400 degrees.
Line baking sheet with foil. Combine marmalade and chili powder in a ziplock bag. Place chicken in bag and evenly coat.
Place chicken on baking sheet and spoon any remaining mixture over chicken.
Bake for 30 min.

********OLD FASHION GOULASH
1 lb. ground beef
1 can diced Rotel tomatoes with green chilies
1 can Ranch style beans
Elbow macaroni (pre cook according to package)
Brown ground beef; drain. Add all other ingredients. Simmer about 15 minutes. Top with grated Cheddar cheese. Its quick, easy and good.
