Any ideas of a good way to cook this - I dont like it just as a vegetable (would prefer cabbage) but is there a recipe that uses spinach as a main ingredient?

Just cook you spinach and make this

SPINACH LASAGNA

3 cups shredded mozzarella cheese
1 15 oz container ricotta cheese
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan cheese
2 teaspoons minced garlic
3 cups marinara-style pasta sauce
9 no-boil lasagna noodles
2 cans (15 ounces) spinach, well drained
1/2 teaspoon black pepper, cracked
pinch of red pepper flakes

Preheat oven to 375° F.
Combine 2 cups of mozzarella cheese, ricotta cheese, Parmesan cheese and garlic, chopped parsley and red and black pepper. Set aside.

In a 9x13 inch baking dish pour 3/4 cup marinara sauce. Place 3 pieces of noboil lasagna on the sauce, covering with another 1/2 cup of the sauce.

Layer with half of the spinach, then a layer spreading half of the cheese mixture over the spinach. Repeat layers. Finish with 3 more lasagna strips and cover with remaining sauce.

Cover with aluminum foil and bake for one hour. Uncover and top with 1 cup mozzarella cheese during last 15 minutes of baking.

Allow to sit 10 minutes before serving.

SPINACH PIE/QUICHE

1 box chopped spinach – cooked & strained
4 beaten eggs
½ cup oil
1 cup chopped onion
garlic clove, chopped
½ cup grated parmesean cheese
1 cup bisquick

Mix all ingredients.
Grease a pie plate (bread dish, etc).

Bake for 30 minutes @ 425 degrees.

Enjoy!

Spinach Au Gratin

2½ pounds spinach, washed, cleaned
1 cup Swiss cheese, grated
2 tablespoons butter
Seasonings to taste

Boil the spinach in salted water for about 20 minutes.
Drain off water.
Put the spinach, seasonings, butter and cheese in a baking dish.
Mix well with a fork.
Bake in moderate oven for about 15 minutes.
The top of the spinach should be browned.

MAKE CREAMED SPINACH!
I just tried it the other day, and it tastes amazing, your sure to love it! Heres a recipe, but i've never tried it homeade :


3 tablespoons margarine or butter

3 tablespoons flour

2 cups milk

1/2 cup grated Parmesan or Romano cheese

1 medium onion, finely chopped

2 cloves garlic, minced

1 to 2 tablespoons butter

2 packages frozen chopped spinach, thawed, squeezed dry

salt and pepper

Combine flour and butter in saucepan; heat and stir to make roux.

Add milk (more if necessary) and cheese.

In another pot, saute onion and garlic in butter; add spinach.

Cook 10 minutes, or until spinach is hot and onion is translucent.

Add white sauce and mix thoroughly. Add salt and pepper.

Note: You can make this ahead and reheat in a casserole (sprinkle with buttered bread crumbs).

Put some oil in a pan and some water, add spinach, cook until softened, then toss with butter and salt or some parmesan cheese.

You can mix it with goat's cheese and spices and flatten a chicken or turkey breast and wrap it around that, should taste fine.

Spinach is great! so many things you can do with it. Put it in pasta remember it only needs about 2 minutes so throw it in last. put it on pizza or eat it raw in salads, stir fry again only for 1 or 2 minutes. The list is endless but its great with recotta cheese.

put it in sandwiches and instead of lettuce in a salad use the spinach Ive tried these both and they taste really good instead of stuffed cabbage how about stuffed spinach.

I eat it as a salad, with bacon bits, and a honey mustard dressing.

Goes great as an ingredients to most seafood dishes and pasta dishes.

And of course a great side dish to most meals.
