It has been in the fridge ever since, unused. Is it okay to eat with toast?

Look at it ... smell it.

If it has a rancid smell or a discolored coating throw it out.

Salted butter lasts a long time ... at least a month, and maybe two.

Unsalted butter does not stay at its best for very long (only a couple weeks).

Bottom line the fats take time to go rancid ... so it should be edible if not real tasty.

Yeah, it'll be fine. Won't kill you. May just taste a little "off" as the fat absorbs other fridge flavors.

no, that is what the expiration date is for. it tells you to consume it before it reaches that date.

well, you may eat it, if you want to be killed by food poisoning /gg
