How to create a pattern in Adobe Photoshop cs3?

I am having trouble to create a pattern in Adobe Photoshop. When I do try their help, I usually end up filling the entire photo with the pattern I was trying to create. Can anyone provide me with a step by step way to create a new pattern?

You can only convert a dingbat symbol (or any other text, while in vector format) to a Brush or a Pattern, but not to a shape. To convert it to a Pattern, click on 'Edit' and then 'Define Pattern'.
