hi himani,
its just as easy,when u do cakes the substitute for eggless cakes is butter or margine,mix up all the ingredients except the eggs as per the receipe and thats it.

Curd is a good substitute for egg.

Some substitues will be entirely ineffective at replacing eggs in a cake recipe. As any good food science book will tell you, eggs are a wholly unique and miraculous food product that contribute many things to a recipe. They are particularly useful for their versatile proteins and their emulsifying abilities. You may be able to use an egg substitute (Egg Beaters, for instance) but do not attempt to use condensed milk or applesauce as a substitute. Your recipe will be doomed.

me being the baker i am, I haven't found a way to replace eggs in any cake. You can make flourless cake though but then that requires way more eggs than 2 or 3. to make a fluffier cake i've found making a marangue(sp?) and folding it into the batter helps a lot. hmmm not sure there is a substitute but i'm sure there is, but i haven't heard of it.

Good egg substitute: Take a quarter cup of ground flax seed, mix it with a cup of water, and stir over heat until it gets thick and gooey. It'll keep in the fridge for a couple of weeks.

Curd (Yoghurt/ dahi) is good substitute. Instead of six eggs , 200 gm curd can be used. Other procedure is same.

Well more information is needed because are you replacing a dairy product with another dairy product or eliminating dairy all together.

If you are eliminating the dairy then I cannot help. If you are replacing then you can try using egg beaters.

We can make eggless cakes by using fruits and nuts in market also eggless cakes with different flavours are available and it tastes great.
