I own a shop, and a 4.3 Blazer. I have seen this on my own vehicle, and what it turned out to be was the EGR Valve. This is a very common problem with this engine. I have had mine since it was new, and have replace the EGR three times. They are bad to stick, and once they do start sticking, they run like crap, and have the exact symptoms yours does. Replace it and your Jimmy will run like new. The way they are made, one can't clean them to make them run right. I have been there and done that.
Glad to help out, Good Luck!!!

The first thing to do is to get the PCM codes checked to see if anything has been caught by the computer. If it has, check through as these are clues to what might be wrong. These trucks had a tendency to get carbon stuck in their EGR valves. Most times you have to replace them as it usually humps the valve when this happens. If you don't have any codes, buy some spray throttle cleaner and run the motor while spraying this stuff around the intake area. If it makes a difference, you have a intake plenum (likely), intake manifold, or a vacuum hose leak. If nothing found here, remove all the plug wires one by one and inspect for a bunch of corrosion or insulation splits including the coil wire. If there are problems found, replace everything as you can't clean these connections. If this is okay, you probably have a leaky CPI unit and that is under the intake plenum and would need to be replaced. Start your diagnosis and don't start replacing things until you find things that are no good. Good luck.

It's possible that you may need an engine rebuild. Go into Autozone and have them do a diagnostic on the engine, you can also order one of their new rebuilt turn-key motors while you are there.

This sucks. I saw the line ".....wrong with my Jimmy." and was so ready to cut a joke and laugh a little just to see it's an auto question. Bummer

Have a good muffler shop check your catalytic converter. Sounds like it's getting clogged and will need to be replaced.
