Okay this might sound strange but it is one of my family favorites, alot of my friends now make it also... It is called Coke Chicken...
4-6 chicken breasts
1 can coke
1 onion chopped
pepper to taste
put everything in a pan together, bring to a boil, reduce heat to low-med.. simmer for 1-1 and a 1/2 hours enjoy.
Tastes very similar to BBQ chicken.

microwaved veggies with some sort of leftover protein served over ramens. It takes ten minutes from the moment I start filling the pan with water till I rinse the pan after. The veggies are usually whatever is going to turn soon, which lately has been a lot of greens and some asparagus because it's in season. onions, peppers, spices and shoot for a sixty-forty greens to pasta ratio. You said quick, healthy (no added fat or a teaspoon of olive oil), and easy and this comes out to a big bowl, fork, knife, and rinse a pan. It also keeps me from wasting produce. Lately I've been going for a spicy ginger sauce as the dish appears vaguely asian. Now if you'd said easy, I've been doing roast chickens with a lot of root vegetables lately. The only real work is peeling and tossing it in the oven. I use the beer can method so it's less fatty.

If you have a slow cooker, they are such a God-send! Come chicken or beef in a slow cooker with a little broth, cook on low all day, get home, shred the meat and add barbeque sauce and serve on buns with salad. Frozen meatballs in the slow cooker with pasta sauce, serve over pasta with bread and salad. Beef with chopped onions and peppers, jar of salsa, add some minute rice when you get home and let cook for 10 min, serve in tortillas with cheese and whatever else you like.
Another thing I like to do is buy a rotisserie chicken from the grocery store and a bag of caesar salad mix, and then shred the chicken and toss with the salad. I would eat the whole thing by myself when I was pregnant.

I do a lot of "cheat" cooking -
I use frozen meatballs from the grocery - pasta and jar sauce (Ragu parmesan is my personal fav) - takes 15 minutes start to finish.
We buy pre-cooked chicken breast meet - So I pair that with some Pasta Roni and veggies or pasta and alfredo - or my husband likes minute rice and chicken with either bbq sauce, teriyaki sauce, or cream of chicken soup.... it's super fast and easy.

cornbread [premade, just add water-kinda thing] and chili [can also be premade]
asian salad [the works: lettuce, mandarin orange slices, toasted almonds, asian zen dressing, etc.]
pasta [boil water and add noodles] and make a quick tomato sauce using a recipe usually found on every can or tomato sauce...
quesadillas [heat frozen chicken strips on the stove top first] and then warm up tortillas on the stove [in a pan of course] and add shredded cheese [and wait 'til it's melted] and then add cilantro and the heated chicken strips on top ... serve warm with pico de gallo or more melted cheese ...
etc. =-)
