They are not moist & chewy, tastes ok though. Is there a remedy to soften them up?

Put them in a food storage container with a wet sponge and leave them on the counter overnight. (of course, don't let the sponge touch the cookies....)
If you don't have a sponge, a washcloth will work.

Basically, increasing the humidity will work to soften the cookies a little.

Put a few of them on a microwave plate in a single layer and microwave them for about fifteen seconds. Or frost 'em and eat 'em the way they are.

Over night in a cookie jar with a sliced-up apple will get them just right.
