CAESAR SALAD DRESSING
2 egg yolks
4 oz. vegetable oil
1 oz. lemon juice
2 cloves garlic, minced
1 tsp. anchovy paste
Croutons
Grated Parmesan cheese
Romaine lettuce
Salt & pepper
Beat egg yolks with a wire whisk in a metal or glass bowl (not plastic) until thick; add lemon juice; drizzle in the oil in a thin stream while you continue to beat with the whisk. It should thicken to a mayonnaise consistency. Add garlic and anchovy paste, salt and pepper to taste. Pour over torn lettuce and toss with croutons and Parmesan cheese.

Homemade Caesar Salad Dressing
1/2 tablespoon Dijon mustard
2 cloves fresh garlic
3 anchovies, soaked in
milk, for 15 minutes
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce
1/4 cup lemon juice
1/4 cup parmesan cheese, grated
1/3 cup olive oil
1. In a blender, combined all ingriedents except olive oil and blend until smooth.
2. Add olive oil in a slow stream with blender still on to make sure the dressing will thicken and not break.
3. Serve over cut romaine lettuce with croutons and more parmesan cheese.

Why don't you look on the back of a Caesar Salad dressing bottle and buy each of the ingredients. Once you make it yourself, you can add spices and other ingredients that you think would add more flavor to the dressing.
