If I am going to make stuffed manicotti ahead of time and freeze it, do I freeze it before or after the actual "baking" stage and when I am ready to use it do I defrost it before I bake or put it in the oven frozen?

Bake it first, then freeze it. Let it defrost and heat it up in the oven when ready to serve. The flavors will meld together better if you bake it before your freeze it. Italian food is always better heated up the second time! Good luck!

Bake the manicotti and then freeze it. You will need to defrost it in order for it to bake at the proper temp and time. Or you can microwave it.

I'd freeze it before the "baking time." Just pull out the day before, thaw somewhat in the fridge, then pop in the oven for the baking time.

Pasta sauces (especially tomato based ones) are easy to freeze. Just remember not to put them in a metal container with tin foil over them. I'd recommend putting them in small, single serving containers. you can take out more than one if you're making for two people, and one person can reheat their own for dinner if the schedules don't match up. Other foods that I'd recommend you do that with are: homemade soups, stews, chillies, and curries. Other things that freeze well are things like enchiladas., and calzones (if you have them precooked and simply need to reheat, otherwise the dough doesn't puff up very much when cooked). I'd also recommend buying a club pack of steaks and one of chicken (and pork tenderloin if you like). Wrap each individually in cling wrap, and place tightly in a freezer bag. Simply remove as many as needed once they're frozen and thaw for dinner. You can also fill a freezer bag with ground meat and use chopsticks in a grid pattern to make little "break points" in the meat. Once frozen, you can easily snap them off inside the bag and extract as many as you need for dinner.

stuff it and freeze it. dont add any cheese or sauce to the top. you do that when you bake it.

you can do it either way.. it will just take longer if its frozen.. and if you do cook it frozen i would suggest covering it with foil so the top doesnt burn before its heated thru
