i dont want to cook all the fajita meat so after i defrost it, can i put the rest in the refrigerator...

you can.
best stored in a zip lock or air tight container and used within a few days of defrosting.
it's not good to thaw then freeze it again unless you cook it then freeze it.

You can, but I would make sure to use it in 1 - 2 days. After that you need to get rid of it because it will not be safe from bacteria. Another general rule of thumb is that cooked left overs should be left in the fridge no longer than four days. Your best option would be to cook all of the fajita meat. At least then you will have a few extra days to use it. If you like fajitas as much as I do, that won't be a problem.
