they are nearly always made 'fresh' but the sauces are normally ready made pastes or powders that they mix in whilst cooking. for example singapore noodles are normal noodles and vegetables, meats etc but they add a curry-like paste to give it that particular taste, so its not all neccessarily made entirely from scratch

It should all be fairly fresh. The whole point about chinese is it is quick to cook.

i think they are made up prior to cooking although they probably freeze some individual ingredients.
