What is your favorite, non-meat, Healthy dish that is easy and in-expensive to eat/ to make??? Please let me know right away! I need something that is good and tasty to eat to make for my family. Also, if you have some sort of link for the recipe, that would help as well, but all I need really is the name of the dish (preferablly Italian, but thqat is the least of my worries!) Thank you in advance!

grilled veggie pasta.....cooked and drained spaghetti, set aside, grill a mix of red/green/yellow sweet bell peppers...onions, zucchini, and well really about any veggie you want......remove from grill and chop into bite sized chunks....toss with roasted garlic and olive oil and toss with pasta........salt and pepper to taste....sprinkle with Parmesan cheese....

Ratatouille Veggie Toss
2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 small to medium zucchini, 1-inch dice
1 medium onion, 1-inch dice
1 (15-ounce) can stewed tomatoes
Salt and pepper
A handful chopped flat-leaf parsley
Heat a skillet over medium high heat. Add oil, garlic, zucchini and onions. Toss vigorously for 5 or 6 minutes. Add tomatoes, salt, pepper, parsley. Reduce heat and simmer 6 to 8 minutes, then serve.

Not my favorite, but a great idea would be whole-grain pasta or spaghetti with tomato sauce. If you want a side, steam up some veggies like brocoli or cauliflower. A great addition to top with might be sauteed onions and bell peppers (any color). Just put some butter or oil in a pan, cut them up and throw them in untill brown and serve over the pasta and sauce with a nice side of veggies.

Lasagna with a meatless sauce, cottage cheese and some vegetable in the layers. I like Hunts spaghetti sauce. If the cottage cheese is too expensive you can leave it out but it's an important ingredient for me. If lasagna pasta is too expensive you could use a layer of big noodles.

quesadillas. put a tortilla on a pan. spead cheddar or mexican cheese, grn chilies and whatever type of hot sauce you like. put another tortilla on top. cook it a couple min. flip it and cook a couple more minutes. serve with spanish rice or chips and salsa.
eggplant parmesan- slice eggplant. season with s&p. dredge in flour then egg then flour again. you can fry it in olive oil then pour marinara over or put in a baking dish and put on the marinara and bake it at 350 for about 30 min ot til hot. sprinkle it with mozzerella.
