Fried Corn Nuggets
Preparation time: 10 min.
Cooking time: 10 min.
Ingredients
2 1/2 cups corn
2 eggs, separated
2 tablespoons all-purpose flour
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons vegetable oil
SERVES 4
Step 1
Combine corn, lightly beaten egg yolks, flour, sugar, salt and pepper in a large bowl.
Step 2
Beat egg whites with an electric mixer set at high speed until stiff peaks form, about 2 minutes.
Step 3
Stir egg whites into corn mixture. Heat oil in large skillet over medium-high heat.
Step 4
Drop heaping tablespoonfuls of corn batter into skillet. Reduce heat to medium. Cook until nuggets are browned, about 3 minutes per side.

Corn Nuggets
"Deep fried corn nuggets--make 'em at home!"
Original recipe yield:

INGREDIENTS
1 (11 ounce) can creamed corn
1 (11 ounce) can whole kernel corn, with liquid
1/2 cup yellow cornmeal
1/2 cup all-purpose flour
1 egg white
2 tablespoons milk
salt and pepper to taste
3 cups vegetable oil for deep frying
DIRECTIONS
In a medium bowl, stir together the creamed corn and drained whole kernel corn. Line a baking sheet with aluminum foil, and coat with vegetable oil or cooking spray. Drop spoonfuls of the corn mixture onto the sheet, and freeze until firm, about 3 hours.
Heat one inch of oil to 350 degrees F (175 degrees C) in a large deep skillet, or fill a deep-fryer with oil as directed by the manufacturer.
Mix together the cornmeal, flour, egg white, milk, salt and pepper in a medium bowl. Dip frozen corn nuggets in the batter, and quickly fry in hot oil until golden brown. Remove to paper towels to drain.

Corn Nuggets
2 eggs
1 cup milk
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons shortening
1 teaspoon granulated sugar
1/4 teaspoon paprika
2 cups drained whole kernel corn
Beat eggs, and stir in remaining ingredients. Drop from a spoon into deep fat and fry until brown.

So I tried many others and they were just not quite right! I kept trying until I remembered pancake mix...it's just about perfect. Probably as close as you can come at home. If anyone else figures out something to add, let me know!
1 can creamed corn
1 can kernel corn, drained
Mix those together and freeze in either an ice cube tray or mini muffin tin.
Mix up pancake batter, with just slightly less water. Add salt to taste. Batter the frozen corn and fry in oil at 300 (it has to be a little cooler or the outside gets done fast but the inside is still frozen). Make sure you flip them over pretty quick after dropping them or they won't turn over. Enjoy!!
P.S. Pancake batter also makes amazing onion rings!

1 pound boneless chicken tenders
vegetable oil for deep frying
1/3 cup all-purpose flour
1/4 teaspoon salt
1 1/2 teaspoons vinegar
1/4 teaspoon baking soda
1/3 cup water
PREPARATION:
Cut chicken into nugget-size pieces, about 1x1/2-inch. Put oil in deep fryer or put about 2 to 3 inches in a Dutch oven; heat to 360°. Mix flour with salt in a small bowl. Mix vinegar with baking soda. Add vinegar mixture and water to the flour mixture; beat until smooth. Dip chicken pieces into batter; allow excess batter to drip off into the bowl. Fry chicken nuggets, 4 to 6 at a time, until golden brown, or about 4 minutes for each batch.
Serve with Sweet and Sour Sauce or Honey Mustard Sauce. Chicken nuggets recipe serves 4.
