I am experienced canner, and there's no correct way to answer that question. After the canning process is done, and you remove the jars to cool, sometimes it's only 5 minutes and others take up to 20 or 25 minutes. Sometimes you give up on them and way later they pop. Are you pressure canning or water-bath? That makes a difference. As long as they do eventually pop, you don't have to worry.

When I pressure can and allow enough time for the steam pressure to drop to zero, the lids pop as soon as they hit cooler air.
When I am hot jar canning jam, it is usually about 15 minutes from the time I filled the jar, left it upside down for about 7 minutes and then turned it upright on the table. I usually have a ceiling fan running so they may pop a little quicker. If they are filled a little too full they may not make much of a noise. They do need their air space to "pop".

I would say that it should happen within 15 minutes after you take it out of the pressure cooker or water bath canner. Usually it is within 5 minutes but I wait 15 before I began to wonder. Sometimes they seal with out making the thump sound but usually they "Thump" . I can over 300 jars of food each year for the last 35 years. I was raised by people who canned thier own food and I also do the same. I try not to buy commercially processed food. Email me for info and recipes if you want.

By the time the jar is cooled completely, it should have popped. If it never popped put it in the refrig. and use it ASAP.

Um...I hope you're not eating any "popped" cans.
A can pops when bacteria get inside it and start eating. This generates gas (like micro-farts), but it can also spoil the food, and if the food is milky, it might have botulism in it. If your cans are popping, you need to fix your technique.
Sorry, but it's my best advice.
