Because she's learned that barking is socially unacceptable (most humans don't like dogs barking in their face) but she wants you to understand the urgency of whatever has her stirred (someone new is here, there's a squirrel outside, she can't wait to go for her car ride) so the squeaky noise is her compromise.
Usually beating herself to death with her fluffy tail will tell you she's excited, but she wants to hedge her bets with noise, since humans prefer speaking over gestures.

I had a dog who made strange noises when he wanted to go outside or was excited. I aways felt he was talking and letting me know what he wanted maybe this is your dogs way of communating with you.
