why does potatoe salad do not remain thick and becomes watery while in ref.

Let the potatos cool before you mix the salad. It gets wet because the potato salad is still warm when you put it in. When there is a cover on it, the moisture (in the form of water vapor) can't escape. The cold temperature of the fridge makes the vapor condense (the same way that clouds form). This vapor then forms water droplets, which fall back into your salad.

To make sure that it stays normal, cool the potatos completely before mixing in the rest of your ingredients.

When the moisture in the air cools, it forms condensation (collects together as water instead of vapor). The condensation in the potato salad pools on the surface because it's not very porous.

Science time!

Potatoes are full of water, and, even chilled, the osmotic pressure of the salty surroundings (mayo, mustard, etc., ), will pull moisture (actually squeeze moisture), from your spud pieces. This can pool and condense on the lid and sides of the container.

It's harmless, and can either be poured or dabbed off, or stirred back in!

Potatoes and other veggies retain water. That is why it is always becst to eat all of it and not store it.
