i like to roast mine in an open pan... i like the crispy skin :)

Open pan raised of the floor with rack. Roast at very high temperature say 475 until registers 165 in the thickest part of the thigh.

I put mine in a roaster covered.....about 25 minutes until done I uncover to give it the crispy skin.

I do it this way to keep it moist inside, nothing worse then a dry chicken..yuk. and I still get the crispy skin :)

Roasting is a dry heat cooking, covering the roast will cause the moisture to be trapped and you will nit be roasting any more you will be steaming. Open container is the best way.

I prefer an open pan . crispy skin,not stewed or steamed.chicken 1 hour @ 300. last 15 min. 400 deg. enjoy.

Just made this today for dinner. i open cook it. u can see it better and is much easier to baste. besides covered cooking u won't get the nice brown skin that is so good.
