This recipe is my grandmothers and it has never failed me

YORKSHIRE PUDDING
Ingredients:
8 oz Flour
8 Medium Free Range Eggs
1 pt Milk
Salt and Pepper
100g dripping

Make the day before and allow to sit in the fridge over night.
When it comes to cooking make sure the oven is pre-heated to 200c. Make sure the tray is heated with the dripping then pour in the mixture shut the oven door and leave to cook. Do not be tempted to open the door until they are cooked.

Start off by preparing your batter at least an hour before you need your puddings......
Then put 4 oz of plain flour in a bowl with a good pinch of salt
(the salt helps to give you puddings a thin base so that they are not soggy and too dense)

Add 3 large eggs to the flour and begin to mix adding enough milk to make the batter into a double cream consistency.

Give the batter a good mix until no lumps are left with a whisk (not a fork this will not get the lumps out and will not encorporate enough air)

Leave for about 40 to 50 minutes on the work surface not the fridge as this slows the gluten down in the flour so they will not rise as well.

Put vegetable oil or lard into yorkshire pudding tray (i prefer oil as it has a high flash point and can take a hot oven) lard tastes better though.

Put in the oven at its hottest setting..... leave in until the oil begins to smoke ... keep an eye on it

Then pour your batter in as fast as possible and get thenm back in the oven. 10 minutes full pelt in the oven. it they look like they are browning too fast then reduce the temperature by 20c..... they should take about 15 to 20 minutes. They will rise perfectly using this method.
try not to open the oven or slam the door.

The fat/ oil in your yorkshire pudding dishes has to be smoking hot before you put mixture in. Will rise every time.

4 onz plain flour
2 eggs
some milk or half milk half water (dried milk is good)
pinch of salt.
spray oil to grease the tin
preheat the oven and the tin to 425ºF (Mark 7)
beat the salt, egg and the milk together then keep beating while you add the plain flour.Let it stand for 30 minutes before pouring into the greased tin and putting into the oven. (make sure both the oven and the tin is hot first)
DON'T OPEN THE OVEN DOOR until nearly ready about 30 to 40 minutes.
You will have wonderful yorkies

Have your batter really cold, preferably in the fridge for a few hours before you want to make the puddings, and have your oil really hot. The reaction of the cold batter in the hot oil makes them rise. Enjoy !!!!

Get the oil super hot before you put the batter in. I use a muffin tray and put the oil in the oven at the hottest temp for about 10-15 mins, then carefully spoon the batter into the hot oil. Stops it sinking and getting all clogged up with the fat. Enjoy your lunch! Yum!

You need to use plain flour eggs and water. It is absolutely imperative that you have the fat absolutely smoking hot before you add the batter to the pudding tray, if you do this right they will rise.

Of course you could try adding powdered Viagra.. (joke)

after you have mixed flour eggs and milk.Add a little water.
And whisk with a fork till you have lots of air bubbles on top of your mixture.Let it stand for a bit.While you heat the oven with your pud tray in, i put my oven on full.Then i give mixture one last whisk use a ladle to pour your mixture into tray as fast as you can!!Put into oven. I have a see threw door on my oven so i can see when they are ready this takes about 15 to 20 Min's,Don't open the oven door while there cooking.

Pre-heat the oil in the tins and then put them in the top of a hot oven. That should do the job. You are making me hungry.
