Mt Shasta, in northern CA- it's a 14,182 ft (active) composite cone volcanoe, that has a beautiful little town beneath it, the town of Mt Shasta (w/ a fabulous view of the mountain). And there're other volcanoes near it too, such as Black Butte- a cinder cone volcanoe, & SO MANY geological landmarks- she will flip out! Oh, & Mt Shasta is where the Headwaters of the Sacramento River are, the natural springs that come right out of the mountain from the glacial melts & very good to drink ((there's a little park there- very nice, & it's considered Healing waters).
Also, Lassen Volcanic Nat'l Park in northern CA. It's amazing! (Probably best to go b/t Apr-Oct, otherwise the higher roads may be closed d/t heavy snow.)
Burney Nat'l Park, near Redding, is also great- a set of beautiful waterfalls w/ a very interesting geological (& otherwise) history.
Northern CA is loaded w/ volcanic areas & picturesque lakes. There're also lots of caves/caverns to visit in CA.
Hope this helps (even though you asked for Southern- oops, just saw that- yeah, I am partial to the north I guess).

Easy! Take her to the Trilobite beds outside of Amboy, California! She'll have a blast and you get to keep what you find!
