I would have to say the cheese of the Havarti culture... with it's sweet and creamy after-taste. A real treat.
Oh, and lets not forget the Italian Fontina... oh... to DIE for. Especially when it's aged a little over two months... mmmm... delicious... texture a bit tougher than provolone... but not as tough as cheddar (which I adore.)
But the one cheese I reserve a special place for in my heart... is the wonderful, zingy taste of Blue Cheese....Mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm............ the thought of consuming it's pale green mold is overwhelming....it's all so gooooood........... cheeeeeeeeeesssseeeeeee.... with a side of after-dinner sherry...

I love anything that is not processed, the sharper the better! However there is only one I go into withdrawal from not having and that is Feta! It is a Greek staple and used for a lot of their dishes and is especially good with Gyro meat and yogurt sauce with marinated onions. Makes my mouth water to think about it!
I love Feta so much I use it on my salads, hamburgers and even in my tuna sandwiches, yummy!

I like a snack cheese called Gjetoast...its from Norway. As for regular every-day cheese, I like cheddar, american, and colby.
