It sounds as though your reason for going back and completing a nursing degree is to "show" that instructor that you can. That's a lot of work for little reason. That instructor does not care about your life. You do. You say that you have a degree and a great job and you do not mention wanting to be a nurse. I think that you should enjoy your job and the rest of your life and forget about that instructor who hurt you. You should only get the nursing degree if nursing is what you really want to do. And if you do, I'd recommend looking for another school.
Remember: Living well IS the best revenge, and it doesn't matter whether that other person knows a thing about it. Don't bother to show her. Forget about her and get on with your life.

Nursing is a really satisfying but super demanding job. If you really want to be a nurse then definitely go to nursing school.
But pick a school that is accredited and has a high pass rate on the Boards. Do some research and pick a school that gives the student a lot of clinical time (working on the floor, hands on work with patients). Pick a school that is convenient to travel to and does clinicals at good hospitals.
If that school happens to be the same one as the instructor with the negative attitude, then you have to do the pros and cons list.
Nursing pays very well, and personally I like shift work. Also, I never take my work home with me. When I'm done for the day(or night), I am DONE!

Two or three different issues here:
First, I understand the "dent", but forget about that person forever. I knew a guy whose brother tried to get admitted to a Business School ranked in the Top 10 in the U.S. to get a MBA. The graduate school advisor, a jerk as I had him as a professor, told the guy he would never make it through the MBA school. Two years later, the guy graduated with a 4.0 GPA and a MBA.
Second, forget about revenge and live your life for yourself and not to show someone else, who probably has already forgotten all about you, what you can do. Show yourself what you know you can do.
Third, you say that you have a great job, is it really a great job with good pay and room for advancement? Or, do you really prefer that nursing degree. Nursing degrees are cool, but just remember that there is a lot of shift work, and, as I have been told, there is a lot of pressure on RNs while at work. Do you want to go to shift work and pressure (well, there would be pressure anywhere), or, do you want to stick with your "great job", your words.
Live your life for yourself. I know that "dent" stuff, but don't just go back to nursing school to get over the "dent" as with your other degree and great job, you should forget about that person and the "dent".
Now, if you do decide to go back to nursing school, if they have already run you off and that person is still there, then, if it is convenient, I would go to another school as that person could still be holding a grudge.
Your more mature, older, and wiser, and if you do go back to either the original school or another school, you will know how to write better to avoid the problems with "anecdotes... and... other things even more stupid". But, the way you write things up, it sounds like the 2nd instructor was running you off for different reasons.
So, I would re-evaluate where you are now and what you want to do with your future. Most of all don't just get a nursing degree to show someone they were wrong, or for revenge, or to get rid of a "dent".
Live your life for you, for the best future for you. If you think it is in nursing then I would recommend a different school; however, you have to consider how you will apply, if you do apply to a nursing school, as I am sure you will be asked "why?" and possibly the 2nd instructor will also be contacted too.
Sorry about the "dent", but it sounds like it wasn't you and that it was someone else just as my friend's brother was told he didn't have what it took to get a MBA at a Top 10 business school.

I am currently a nursing student and am fortunate to have great instuctors. Don't let one nasty instructor ruin your dream if nursing is the career you really want! If you are dedicated and put the work into it, you will make it through. Maybe that instructor isn't even there anymore, you never know. But even if they are...prove them wrong! Good luck!

Nursing school is extremely time consuming, but totally worth it in the end. I would say don't go back to that school because they obviously are very willing to help their students, which profs are there to do! The school I go to EVERYONE is there to help and they want us to succeed, so try and investigate a little before picking a school though. So go back to school, it will be totally worth it!
