Why are Americans able to join the military at 18 and go kill people, but need to be 21 to drink a beer?

Yes it is.Your wars are fought by mislead poor people with little chance in life.
People sign up for one year but the contracts are made that way the army can change it any way they want.The soldiers on their part can never claim any rights coming from their contracts with the army where again most sign up for the pretty promises which turn almost always out to be dirty lies
