Hmm... my favorite dish would be Bombay Biryani. It's always so full of flavor(or as you would say in Urdu "chatpati" :D ) and there's a lot of ways you can experiment with it. If you want to make it even more spicy, you can just add some raita!
And for desert, it would be kulfi, rasmalai, or kheer.
I'm not sure if these are strictly Indian dishes, because my parents are Paki, but the foods are very similar either way so... yeah. : )

Palang Saakor Tenga (Fish in Spinach) right this is the recipe for it: components : 500 gms rohu fish (cut back into products) 2 tsp turmeric powder 500 gms spinach mustard oil for frying the fish ½ tsp fenugreek seeds 3-4 tbsp lime juice salt to flavor Cooking : Sprinkle the fish with salt and a million tsp turmeric powder and shop a million tsp turmeric powder and shop aside for 10 minutes. warmth the mustard oil and fry the fish some products at a time till they are crispy and golden brown. Drain and shop aside. cut back the spinach into small products. get rid of the oil left over from frying the fish, leaving in basic terms approximately 2 tbsp in the pan. upload the fenugreek seeds and allow them to splutter. blend in the spinach leaves and one cup of water. convey to the boil and upload the relax turmeric powder and season to flavor. enable the gravy to simmer for a couple of minutes and then upload the fired fish. conceal with a lid and cook dinner for yet another 2-3 minutes. placed off the flame and combine in the lime juice. Serve with boiled rice.
