If a house is shuttered up and vacant for an extended period of time will the water in the various sinks' traps eventually evaporate and allow sewer gases to back up into the house?

yes it can and it will happen
only way to stop it is to leave each cold water faucet to drip

yes the water in the sink traps will evaporate. you should also look at any traps in the shower stalls tubs and toilets it does not happen very quickly but over about a three month period they will dry out, this also depends on the relative humidity in the house. Don't forget basement drains around a washing machine or utility sink. I have found that if I dribble a little mineral oil into the drains it will sit on top of the water and slow evaporation. Yes. Thats one more reason (besides preventing freezing) to put RV antifreeze into traps.
