I'm not sure what you are asking. Are you looking for a 2-3 year program? Are you looking for part-time work while in school? Are you looking for an educational program which will lead to a decent job after graduating? Have you already done part of a degree (you say "back" to school), or would you be starting from scratch?) I understand that there are some decent nursing programs which don't take longer than this, and nurses are hugely in demand with high salaries these days. Otherwise, you are looking at things like bookkeeping at a community college.

House cleaning. It sounds dumb, but it makes decent money and you can make it go with any schedule. Put adds up in coffee shops or on craigslist.com, charge $27/ hour. Its quick and relatively easy money and you don't necessarily have to pay taxes on it.
