from what I can tell it's a difference in how cold they allow it to get and how fast..

soft serve is frozen at a higher temperature more slowly, and hard is frozen at a colder temp more quickly..

soft serve is just that....its served soft so it flows into the cones easier

regular is frozen to a solid state so you have more time to get it home in the package before it turns into a puddle :)

sorbet is make from juice and fruit and sometimes a persevative to keep it fresh and ice cream is made of heavy cream, sugar, and flavor. sorbet is something you can easily make at home with a blender ice cream is a little harder to make you need a ice cream makes to do it. hope that answers your question
