It is dangerous to bypass. The meter regulates the pressure into your house. Too much pressure can put in more gas than the pilots on your equipment can burn, which will release gas into your house. You can get sick, or a flame could cause an explosion. Also, it is illegal to by pass any utility meter.

if your a plumber and know how to run gasline it can be bypassed. If your not, you risk blowing your self up or going to jail. leave it alone!! besides it also works as the gas pressure regulator, dropping the pressure from the high service side to the lower residental levels. Thus over pressuring your lines causing every gas appliance in your house to leak gas, thus having multiple gas pockets ready to go BOOM!

For safety purposes it is essential for the reasons stated earlier... pressure regulation, auto-shutoff in case of earthquakes, etc.
And of course, depending on your municipal / county regulations and codes, as well as the local utility rules... bypassing it could very well be criminal activity that would earn you at LEAST a fine, or even jail time.
A California Landlord illegally rigged an apartment building for natural gas. 3 died from carbon-monoxide poisoning and he is currently serving an 80 year sentence:
20 years for each death
5 years for the gas installation
5 years for improper ventilation
