It's an abbreviation for "Rest In Peace", commonly used on tombstones made when hand-chiselling was the only method of putting words and symbols in the stone surface.
The reason it was abbreviated was space, time and energy. Since the stone had to be hand chiselled both from the quarry and to be shaped into a tombstone, it was more expensive to completely carve out "Rest In Peace". The dead person's name and dates of birth and death and perhaps a small epitaph like "Beloved Wife" were more important.
Also, considering many people died of disease in epidemics, a mason would have little time for lengthy inscriptions, and "R.I.P" fit nicely into the smaller space above a person's name.
