i prefer to use chicken but here's a good beef one.

i use flank steak because its easiest for sauteeing

marinate the chopped steak in minced garlic, honey, cinnamon and a dash of soy sauce for about 30 mins to 1 hour.

sautee beef in olive or vegetable oil along with diced eggplant, sliced red and yellow bell peppers, chopped white onion, sliced mushrooms, grated carrots and some ginger (really what kinds of veggies is up to you, though i would avoid tomato for this recipe, it doesn't mesh well with the honey and is overpowering).
season with basil and a dash of salt and pepper. once beef is almost cooked and veggies are softened, add red curry paste, sautee for 2 more minutes, then add coconut milk. simmer and stir for 2-3 minutes and serve over jasmine or basmati rice immediately. absolutely delicious

heres the real hot Indian beef curry.
Ingredients:
• BEEF 1kg
• Onions (large) 4 nos
• Ginger Garlic paste 1 spoon
• Coriander powder 4 spoons
• Turmeric powder 1/2 spoon
• Chili powder 1 spoon
• Pepper powder 1 spoon
• Garam Masala 2 spoons
• Coconut cuts
• Curry Leaves
• Oil
and Salt to taste
PREPARATION
Cut onions into thin long pieces and saute it in oil in a pan for about 25 - 30 minutes. Add ginger garlic paste in between. Onions will become very soft and somewhat like a paste.
Add Coriander, Turmeric, Chili & Pepper powders and sauté for another 5 mins.
Add Garam Masala and continue to sauté for another 5 mins.
Add cleaned and cut BEEF into the mixture. Add Salt as needed.
Mix well so that the masala is mixed with beef. Keep the lid closed and give enough time for the beef to be cooked (about 45 minutes... If you cook beef in a cooker earlier and add it to this mixture we can reduce the cooking time)
Add Coconut cuts and mix well.
When the beef is cooked and the mix becomes dry (once the water from beef is evaporated), add oil and fry the mixture.
Add Curry leaves
have a nice hot beef curry.

Here's a very simple beef curry recepie that i use all the time, and only requires 20 mins of your time.

Ingredients
1 tbsp vegetable oil
½ sweet onion, chopped
100g/3½oz beef rump, cut into strips
55ml/2fl oz vegetable stock or water
1 tbsp chilli flakes
1 tbsp coriander seeds
150g/5oz potatoes, diced and blanched
100g/3½oz spinach leaves
1 tbsp mild curry powder

Method
1. Heat the oil in a deep frying pan and add the onion. Cook for two minutes until softened.
2. Add the beef and cook over a medium heat to brown all over.
3. Add the remaining ingredients and simmer for 15 minutes.
4. Pour into a warm bowl and serve.
