My mom just started working and she dont get home until 6 or so everyday. So I was wondering if anybody knew of any recipes that are fast and easy that I could cook for when she gets home she dont have to cook.
any ideas would be great, thanks.

Chicken and Rice Casserole

Prep Time: 20 minutes
Cook Time: 25 minutes
Yield: 6 to 8 servings

2 (14 1/2-ounce) can green beans, rinsed and drained
3 cups diced cooked chicken
1 medium onion diced and sauteed
1 (8-ounce) can water chestnuts, drained and chopped
1 (4-ounce) can pimentos
1 (10 3/4-ounce) can condensed cream of celery soup
1 cup mayonnaise
(6-ounce) box long-grain and wild rice, cooked according to package directions
1 cup grated sharp Cheddar
Pinch salt

Preheat oven to 350 degrees F.

Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly.


Easy Slow Cooker Pot Roast

4 pounds chuck roast
salt and pepper to taste
1 packet dry onion soup mix
1 cup water
3 carrots, chopped
1 onion, chopped
3 potatoes, peeled and cubed
1 stalk celery, chopped

Take the chuck roast and season with salt and pepper to taste. Brown on all sides in a large skillet over high heat.

Place in the slow cooker and add the soup mix, water, carrots, onion, potatoes and celery.

Cover and cook on low setting for 8 to 10 hours.


QUICK TEXMEX GOULASH

1/2 lb. elbow macaroni
1 lb ground sirloin
1 small onion, finely diced
2 c. tomato juice
1 pkg. McCormick's Taco Seasoning
1 can black beans, drained and rinsed
1 can sweet corn, drained
2 c. shredded mozzarella cheese
sour cream
sliced black olives
chopped green onions

Prepare the macaroni according to the package instructions.
(Note: Do not rinse the noodles. The starch left on them helps bind the goulash so it doesn't get too runny.)

Sauté the sirloin and onion in a skillet until the meat is brown and the onions become translucent.

Drain the fat off. Add tomato juice and the taco seasoning to the meat. Bring to a boil then reduce heat, cover, and simmer for about 10 min.

In a large pot, combine the noodles, meat mixture, corn, beans, and shredded cheese. Allow this to simmer for about 20 minutes or until heated through and the cheese is melted. You may need to add up to a cup more of the tomato juice if it's too dry.

To serve: place a helping of goulash on a plate then garnish with sour cream, black olives, and green onions. It's nice to set the garnishes on the table as when serving tacos. Don't be afraid to use whatever garnishes you'd use on a taco. Some like green peppers, jalapeños, salsa, fresh diced tomatoes, crushed tortilla chips, cheddar cheese. Get creative!

These are pretty easy and yummy

Cheeseburger Casserole

1 pound ground beef
¼ cup chopped onion
1 small can mushrooms (drained)
1 1/8 teaspoon pepper
1 can buttermilk biscuits
¼ cup chopped green peppers
8 ounce can tomato sauce
¼ cup catsup
½ pound sliced American cheese

In a skillet, brown beef with onions and green peppers. Drain off excess liquid. Stir in tomato sauce, mushrooms, catsup and pepper. Heat thoroughly. In an ungreased 1 1/2 quart casserole, alternate layers of meat mixture and cheese slices. Arrange biscuits on top. Bake at 400 degrees for 20 – 25 minutes or until the biscuits are done.


Ground Beef Stroganoff

2 tablespoons butter
¼ cup sliced green onion
1 clove garlic, minced
8 ounces sliced fresh mushrooms
1 pound ground chuck
3 Tablespoons lemon juice
3 tablespoons red wine
10 ½ ounces condensed consommé
1 teaspoon salt
¼ teaspoon pepper
4 ounces medium egg noodles
1 cup sour cream
chopped parsley

Heat butter in skillet over medium-low heat. Add green onion, garlic, and mushrooms; sauté until tender. Add ground chuck; cook, stirring, until no longer pink. Stir in lemon juice, red wine, consommé, salt, and pepper. Simmer, uncovered, 15 minutes. Stir in the uncooked noodles. Cover and cook 5 to 10 minutes, or until noodles are tender. Mix in the sour cream/ heat through, but do not boil. Sprinkle with parsley and serve immediately.

Frozen broccoli and leftover chicken get an easy--but
elegant--treatment with a saucy blend of cream soup and mayonnaise, all with a golden, cheesy crumb topping.

Prep Time: 5 Minutes
Cook Time: 30 Minutes
Ready In: 35 Minutes
Yields: 4 servings

INGREDIENTS:
2 (10 ounce) packages frozen broccoli florets or chopped broccoli
3 cups cubed cooked chicken
2 (10.75 ounce) cans condensed cream of chicken soup, undiluted
1 cup mayonnaise
1 teaspoon lemon juice
1 cup shredded sharp Cheddar cheese
3/4 cup dry bread crumbs
3 tablespoons butter or margarine, melted
1 tablespoon sliced pimento (optional)

DIRECTIONS:
1. Cook the broccoli in boiling water for 1 minute; drain. Transfer to
a greased 11-in. x 7-in. x 2-in. baking dish; top with chicken. Combine
soup, mayonnaise and lemon juice; spread over chicken. Sprinkle with
cheese. Combine bread crumbs and butter; sprinkle over top. Bake,
uncovered, at 325 degrees F for 30 minutes or until heated through. Let stand
for 10 minutes before serving. Garnish with pimientos if desired

chicken and apple quesadillas

prep time 7-10 minutes
cook time about 10 minutes

2 medium sized flour tortillas
chopped boneless, skinless chicken breast
1/2 can stewed chopped tomatoes
chopped green and red bell peppers
chopped white onion
minced garlic
salt
pepper
chili powder
grated cheddar and jack cheese
1 granny smith apple
sour cream (optional)

(store bought salsa can be substituted for tomatoes, bellpepps, onion, and garlic)

sautee chicken in pan with vegetable oil, add veggies to chicken and cook for about 4-5 minutes (until chicken is cooked through and salsa mixture is done). season with salt, pepper, and chili powder.
set aside.
lightly brown tortilla in pan, flip. add cheese first and then spread the chicken and salsa mixture over one half of tortilla. fold and brown each side, cooking until cheese is melted.
remove from heat and open the tortilla, placing apple slices (peeled) evenly over the filling. close.
repeat process with second tortilla and other ingredients and enjoy! very nice with some sour cream on side.

i found this recipe to be very simple and even more delicious, don't be thrown off by the apple, its amaaazing with it.

Here are a few suggestions. I think its great that you are willing to cook dinner for your mom. I'm sure she will appreciate it very much.

This recipe is very good and easy to make.
Cheeseburger Macaroni
1 pound of hamburger
1/4 c. chopped onion (optional)
1/3 c. ketchup
1 1/2 c. water
1 pkg Velveeta Shells and Cheese Dinner
1. Brown hamburger with onion (optional) in large skillet; drain
2. Place hamburger in skillet, stir in 1 1/2 c. water, ketchup, and shell macaroni.
Bring to a boil. Reduce heat to medium low; cover. Simmer 10-12 minutes or until macaroni is tender.
3. Add velveeta cheese sauce; stir until melted.

Hamburger Pie

1# ground beef
1/2 c. chopped onion
2- 16oz cut green beans, drained
1- 10 3/4 oz condensed tomato soup
1/4c. of water
salt and pepper to taste
3-4 med potatoes, peeled and quatered
1 beaten egg
milk
1/2 c. shredded chedder cheese
Cook hamburger and onion till meat is browned and onion is tender; drain off grease.
Stir in beans, soup, water and season with salt and pepper.
Place mixture in a pan.
Cook potatoes in salted boiling water about 20 min or until tender; drain. mash while hot; stir in egg. Add enough milk to make potatoes fluffy, yet stiff enough to hold their shape. Season with salt and pepper.
spread potatoes on top of meat mixture. Sprinkle with cheese.
Bake, uncovered, in a 350 degree oven for 25-30 minutes.
makes 4-6 servings
* Or you can use instant mashed potatoes. Just add an egg and milk to the potatoes. Do not add butter.

This is easy.
Saturday Chicken
5 servings
10 chicken pieces
(you dont have to use that many chicken pieces. Use how many pieces you want. the rest of the recipe stays the same.)
1 can condensed cream of mushroom (or cream of chicken)
1 cup of cream or milk
salt, garlic powder, and paprika- to taste
chopped parsley
Season chicken with salt, garlic, and paprika. Next, spread it out, in one layer baking pan. Dilute the soup with the cream; pour it over the chicken, and sprinkle parsley on top.
Bake , uncovered, at 350' for 1 hour or until juices run clear when chicken is pierced with fork.
Makes a delicious gravy. Serve with mashed potatoes or buttered noodles or rice.

Try one of these....if you like BBQ......(chicken wings or ribs are the best (my opinion).


Cola Chicken

4 skinless, boneless chicken breasts
1 cup catsup
1 12oz. can cola (pepsi, coke, etc.)

Put chicken in a non-stick pan. Mix together catsup and cola,
pour over chicken.
Bring to a boil. Cover, reduce heat and cook 45 minutes. (turning
chicken a few times, while cooking...to prevent from
sticking to pan)
Uncover, turn up the heat and continue to cook until the sauce becomes
thick and adheres to the chicken.(It turns into the most incredible BBQ sauce. Yummmm!)

Variations: Omit (or ‘not’)catsup and add a small jar of Salsa.
Have tried this with Shrimp Cocktail Sauce and using Pop Corn Shrimp…wasn’t bad…but doubt that I’ll make it again.

Have also made this with chicken wings….adding a package of Hot Wings seasoning to mixture…’good’!

I have used Ribs, just as good. (made this several times)

I tried this recipe with 'meatballs'....was equally
as good...served over rice.(maybe a meatball sandwich with swiss cheese….slaw?)

Also have used ‘stew meat’ chunks and served over rice.

(Personally, I like the ribs best then the chicken wings.)

grab up a campbells cookbook. they have great suppper easy recpies to make. and you should be able to get left overs out of it to.

check your library they might have some quick meal cookbooks to borrow

or get some ebooks off ebay. they have tons for pennies!
lots of easy ones, smoothies, cakes, salads, egg, you name it.
all you need is a pay pal account to pay for them then you can download them right to your pc. maybe your mom can help you with that if you don't have your own account

It will depend on the fruit or veggie involved with a comparison. If perhaps you compare a farreneheit to a carrot, the carrot is the better of the two nutritional. But since you compare an avocado to the carrot, then this avocado is better. The two the apple and avocado, are fruits.
