Lean meat has a low sodium content as well as a low fat content, which means that corned beef DEFINITELY does not apply (it is high in both). Trimmed beef could be considered lean, as well as light meat chicken (no skin).

Almost everyone here gave you good answers. But really, in today's world, unless you have more time than sense, a crock pot IS the ONLY answer. The flavors have time to just all meld together and it is fool proof. Put the hard veggies on the bottom of the crock pot (potatoes, carrots, onions) then the brisket, then about an hour before done place the cabbage on top. (with all the requisite seasonings; and don't use water for heaven's sake. Watery corned beef! What is that.) there are leaner cuts of corned beef, but the world's favorite is NOT the lean version. Ask the butcher which cuts of meat are considered lean. Also, look at the meat. You probably already know the white parts are the fat, so avoid those that have the most fat, or cut it off prior to cooking it. The more expensive the "hamburger" the less fat it has, but the label will tell you how much fat is in it. Learning to read all food labels will teach you a great deal about what your are eating.
