As of now I just put it in the fridge on a plate

Cover it with a plastic wrap to keep it from absorbing odors from other foods and drying out.

When I thaw something out it already has its covering. So how is it that you don't? I mean when i freeze meat I put it in freezer bags and thaw in the same bag.

personally, i'd cover EVERYTHING in the fridge. there's all sorts of crazy things floating in the air and growing on surfaces. When i worked at a grocery store they found botulism bacteria growing on the shelf that the staff stored their lunches on. blech.

i keep things covered so it doesn't dry out or so you don't have anything knock against it or drop on it.
don't want germs getting on other things in the fridge.

If it was in the freezer, shouldn't it already be covered / wrapped?
