Hi, I'm actually growing some spelt right now. It is one of the ancient ancestors of modern wheat. Wikipedia is a good source of information on this subject:
http://en.wikipedia.org/wiki/Spelt
This was one of the most economically important types of wheat during the Bronze Age, dating from 3500BC til 1200BC.
It is now seldom grown although ancient wheat types are popular with organic farmers and people farming on marginal land and poor soils because they are less environmentally demanding.

Spelt ? It's a cousin of wheat , a little bit heavier, with an earthy taste in baked goods.
